Introducing Amy’s Magical Muffins.

They’re magic because they’re healthy and your kids will scarf them down and get their morning protein. Not only will they be able to jump off a giant muffin, they will be able to focus more easily on their schoolwork, pay attention without needing to jump around as much, and even behave better. And you can throw one in your purse on the way to work…

These Super Muffins are the creation of Austin’s most popular naturopathic doctor, Amy Tyler, who works at Peoples Pharmacy in South Austin. They are kid tested and approved even for discerning palates. Her kids love them!

Protein-Rich Breakfast Muffins

Wet Ingredients

• 4 ripe bananas
• 4 eggs
• 1 cup almond milk (or water)
• 2 tbsp honey (optional)
• 2 tsp vanilla extract

Dry Ingredients

• 2 cups oats
• 1 cup gluten-free flour (coconut or almond flour)
• 1 scoop protein powder (e.g. Vega One All in One Nutritional Shake Vanilla Protein Powder)
• 1/2 cup organic Hemp protein powder (e.g. Nutiva)
• 2 tsp baking soda
• 2 tsp cream of tartar
• 1/2 tsp cinnamon
• 1/4 tsp salt

Stir-Ins (Optional)

• chocolate chips
• blueberries
• nuts

Directions

• Preheat oven to 400˙F
• Grease a 24 muffin-tin with coconut oil
• Place all wet ingredients in blender and blend on high for 1 minute
• Combine all dry ingredients in a mixing bowl and stir until thoroughly mixed
• Slowly add dry ingredients into blender and blend until all ingredients are combined
• Pour batter into muffin tins
• Optional: add a few blueberries, chocolate chips or nuts (mix in or leave on top)
• Bake for 15 minutes

Serving Size: 3 muffins
Protein per serving: 12g
Added sugar per serving: 4g (with honey); 0g without honey; a bit more with choco chips
Fiber per serving: 7g

Amy Tyler, ND received her Bachelor’s degree in chemical engineering from the University of Texas at Austin.  After working as an engineer for several years, she decided to pursue her passion for natural health, which led her to obtain a doctorate degree in naturopathic medicine at Bastyr University in Seattle.

Amy is a frequent co-host of the Let’s Get Healthy on 1370 AM with Bill Swail, RPh, of Austin’s beloved Peoples Rx Pharmacy.  She frequently teaches classes to the public on topics such a hormone balance, allergies, and nutrition, and she enjoys her role as a corporate wellness consultant.  As an advocate for increased healthcare choices and the growth of the naturopathic profession, she serves as Secretary of the Texas Association of Naturopathic Doctors and is a member of the American Association of Naturopathic Physicians.
