Stir-fried garlic zucchini

Sizzling slightly crunchy and tender veggie dollars.


  • 1 large zucchini or 2 small
  • 2 cloves garlic
  • 1 tablespoon oil
  • 1 tablespoon butter or ghee
  • salt to taste


Cut zucchini into relatively thin slices.
Heat pan on medium flame.
Add a drizzle of oil.
Lay down zucchini pieces making sure they all have contact with the pan.
Once they are nicely browned, flip them.
Cook for 2 more minutes and then add butter/ghee and garlic.
Cook until nicely browned on bottom.
Serve immediately with salt to taste.
